Keto French Toast

On the weekends, I often will fix something a little extra special. I frequently get the request for keto pancakes or something of the like from my 5 and 2 year olds. A big breakfast means more time to sit with my sweet hubby and talk over a hot cup of coffee for a “lazy” Saturday morning without feeling like I am neglecting everyone’s appetite. I LOVE keto pancakes, but for me, they can be a bit of a pain (sticking to the pan, hard to flip, etc…) so I was interested in trying something new. Today I am super excited to bring to you, Keto French Toast!

From a recipe for flourless bread which you can find the link to here, I baked this quick bread before hand and was able to easy-peasy fry it up in a pan with some cinnamon egg mixture and it turned out amazing!

Be careful to slice it “thin enough” which is really up to your preference, but I like for the egg mixure to be able to moisturize the bread enough to infuze that vanilla extract/cinnamon flavor. Take into consideration the denser texture and be sure to soak them well on either side. Organifi

So let’s get down to this great quick and easy trick to awesome french toast…..

Keto French Toast

6 slices (or more) of Flourless Peanut Butter Bread

1 tbsp butter

2 eggs

4 tablespoons heavy cream

1/4 teaspoon cinnamon

1 tsp vanilla extract

Whisk together all ingredients except the butter and bread and heat your pan to medium. Melt the butter and dip each slice on either side being sure to allow them to soak in a little of the mixture (if you run out, half the egg mixture and mix up some extras). Lay them in a your heated medium fry/saute’ pan (should fit about 4 at a time) and allow them to brown on each side before serving.

You can serve these with your favorite sugar free syrup, dust with powdered erythritol or cook down some berries (using sparingly regarding carbs) to top with a sort of chutney.
