Keto Lemon Blueberry Muffins (2 carbs each)

Lately I have been a very good girl with regards to our 4 month Keto cycle-in. We have committed to 4 months of strict Keto for the purposes of healing our bodies, losing excess weight, and cutting out sugar addictions. We then will return to a Paleo diet for the summer months. Paleo or Keto, these muffins are the perfect treat to indulge in without sacrificing health or flavor!

This morning I had these with my usual breakfast and they were the perfect weekend treat. You could easily leave out the blueberries and add a tablespoon of poppy seeds for a lemon poppy seed muffin.

Keto Lemon Blueberry Muffins

3/4 cup almond flour

1/4 cup ground flax seed

1/3 cup Swerve confectioners

1 tsp baking powder

1/4 cup melted butter

1/4 cup heavy cream

3 eggs

3 Tbsp lemon juice

1 tsp vanilla extract

20 drops liquid stevia

45 blueberries

Preheat your oven to 350º and line a cupcake tin with 9-10 silicone or *paper liners. Mix all dry ingredients and set aside. Mix all wet except the blueberries and add mixture to dry. Blend until just combined, then divide among liners about halfway full. Press 5 blueberries per muffin into the tops and bake for 18-20 minutes.
