I have been experimenting with fat bombs lately and so far these are my favorite version. They have more fat and therefore you need fewer, but want more! These are the perfect treat for keeping on the straight and narrow, yet still getting that sweet indulgent reward for all of your hard work. When eating healthy, especially around people who are not, you have to say “no” to a lot of the foods that maybe you once enjoyed very much. Don’t give in to peer pressure, rather share these amazing substitutes that lack nothing in the realm of flavor!!
Recipe (so…stinkin’…easy!!)
1/2 cup almond butter (smooth)
1/2 cup coconut oil
1/2 cup Kerry Gold butter
1/3 Swerve Sweetener (regular or confectioners)
1/4 cup unsweetened cocoa powder
1 tsp vanilla extract
8 drops liquid stevia
1/8 tsp sea salt
Lilly’s Chocolate Chips (stevia sweetened)
Melt all but the chocolate chips in a saucepan whisking on low until combined and thoroughly melted. Pour into cupcake liners or silicone molds only filling about 1/3 full and place into freezer for 4 minutes, then remove (should still be liquid enough for chocolate chips to stick) and sprinkle chocolate chips and place back in freezer for an hour until fully set, then store in plastic baggies in freezer or fridge until ready to eat, mmmmmm!!

I know the carbs are only >2 per bomb, not sure about the protein. 🙂
